This is a fascinating wine. I’ve never made a sparkling wine entirely from Viognier, but this Viognier worked quite well because it came from a cooler climate in Livermore, where the very cold nights and the Bay breeze influence the flavors in the fruit. Viognier is a rich, oily Rhone variety that pairs well with spicy food because of its viscosity.


The result is a richer style of Sparkling wine, reminiscent of Champagne in weight and flavor profile. Aromas of brioche from the extended aging on lees, followed by aromas of green mango, Asian pear, cucumber, and honeysuckle give way to flavors of nectarine and honeydew melon.
